Nick , what revs are you pulling a wide open throttle ?
If it is around 4 .1/2 to 5000 a big v8 will not change any thing unless it can run higher revs with out blowing up
But if its around 3-4 it might help,with more torque for the jet unit.
In boats torque is more important than raw hp.

I'm at a bit of a loss.... everything on the boat is finished and working well Special thanks to Allan for his help with getting the engine running right and Jack for telling me how to make up the rubber cush dirve. Hint Freeze the rubber before drilling and cutting- It works!
