I can't speak for your boat, only the way Lewis have fitted the bearers in Rebound and Turbo Fire.

Both have three cross pieces linking the long bearers together. Each of these cross bearers is bolted to the side bearers with angle iron, bolted with SS bolts and Nylocs. Each of the cross bearers is bolted through the keel with a long brass bolt, 3/8" dia.

The difference from your description ios at the transom. Here there is a wide board, placed horizontal to the keel which bolts to the bearers, has the skeg bolts pass through and finally has a fabricated steel angle bolted to the transom. This is an incredibly strong section and would ensure there is no forward or side to side movement of the bearers. Finally, there are two timber plates screwed to the transom that locate the end of the bearers against the transom.

Hope the photos help you.
