Take the skeg off the boat, get a long sheet of ply off cut, draw a line that reps. the keel and the thickness of the keel and lay the skeg mounting surface on the line at 90 deg, now use the shaft or a straight broom handle though the skeg and across the keel line. If you trace a line around the parts you will have a plan to keep.
This will give you the placing of the log from the skeg and any other mesurments you need
Just buy taking the wedge out will move the log a long way on the keel.
You can then mesure where you think the log should sit and do the ajustments.
Less angle more top speed --more angle better for pulling skier's out of the water.
In saying that, on the newer race boats, the prop is mounted up the hull further, this under speed tends to lift the boat out off the water evenly, but the motor is mounted further forward in a rear mount.
The further back you go with the skeg/ prop , under power the back of the boat tends to lift up and push the nose in. Its all about balance under power

If you want it to idle nice when you back of the throttle you need a fly wheel , if you can put up with a gentle back off the throttle it will idle but it will spin quicker.
